Quick Chocolate Truffles

These delightful chocolate treats are easy and fast to prepare.  You can use up any old chocolate sitting around your kitchen in unique ways. I use different types of morsels, such as butterscotch or white chocolate to spice up a new batch I’m preparing.  Start with any good chocolate and cut up into small pieces.  You can use mostly chips if that’s all you have.  For a starter batch, use only 1 cup of mixed chocolate & 2 T butter and melt in microwave on medium for 2 minutes.  Stir in heavy whipping crème or even buttermilk.  You can spice it up with any liquor you prefer.  2 T of Kaluah or other to flavour these treats to your liking.  Mix thoroughly and refrigerate until firm enough to scoop with small ice crème scoop.  You’ll need to roll them quickly in cocoa powder and use small paper cups to hold them.

Molto Benne Peanut Butter Cookies

These are my favourite peanut butter cookies ever…  Start with room temp butter/one stick,  4 oz. sugar & 4 oz. brown sugar & ½ cup peanut butter of choice.  Mix preferably in Kitchen Aid with paddle until smoothe.  Add 1 egg & 1 T vanilla.  Mix dry ingredients:  6 oz of flour & 2 oz. oatmeal,  2t baking powder & ½ t salt.  Mix only until it comes together well & chill for 1 hour before baking.  Preheat oven to 350. Use a small ice crème scoop to form cookies.   Place 2 inches apart as they will spread slightly.  Bake for 12 -14 minutes or until lightly golden brown. Enjoy…
